Need a really simple ice cream sandwich? Use boxed brownie mix! Baking off a pan of brownies and sandwiching your favorite ice cream between them is the easiest way to have a frozen treat ready to go all summer long. The classic pairing of a chocolate brownie and vanilla ice cream is hard to beat, but just about any ice cream would be good here. I would reach for the mint chocolate chip or strawberry if I wanted to switch it up.
It’s helpful to build the ice cream sandwich in the same baking pan you used to bake your brownies in, so be sure to use a metal pan to ensure it's freezer-safe. Using the same pan also helps give you some borders to contain the ice cream, but you can also use a baking pan or even a cutting board if you need. Once the sandwich is frozen, you can trim off any melted ice cream that inevitably dripped down while spreading over the brownie. It will just be extra scraps to reward your work.
These can be made ahead and kept frozen for up to 1 month. After the ice cream has rehardened, I like to pre-cut them and put them back in the freezer so they are ready to serve as soon as I need them.

Ingredients
Cooking spray

(16-oz.) box brownie mix, plus ingredients called for on box
- 2 cups
vanilla ice cream, softened
Directions
- Step 1Preheat oven to 350°. Line a 13" x 9" baking pan with parchment, leaving an overhang on 2 long opposite sides. Grease with cooking spray. In a large bowl, prepare brownie batter according to package directions. Pour into prepared pan; spread in an even layer.
- Step 2Bake brownies until a tester inserted into the center comes out with a few moist crumbs attached, 20 to 24 minutes. Let cool.
- Step 3Using parchment overhang, remove brownies from pan. Line same pan with parchment, leaving an overhang on 2 long opposite sides.
- Step 4Cut brownie in half parallel to work surface to make 2 (13" x 9") pieces. Arrange one half cut side up in prepared pan. Spread ice cream in an even layer over brownie. Top with second half cut side down and gently press to make sure edges of brownies are touching ice cream. Freeze until ready to serve, at least 2 hours or up to 1 month.
- Step 5Using parchment overhang, lift sandwiches out of pan. Cut in half lengthwise, then cut each half into 4 pieces. Serve immediately or return to freezer.
