I combine classic steak seasoning ingredients to create this popcorn seasoning, which will upgrade not only your stovetop popcorn (or store-bought in a pinch), but any salty snack you want to add layers of flavors too.
The best part about making your popcorn seasoning mix at home is that you can control the salt levels. If you decide to opt for pre-made popcorn, skip the pre-salted variety or ditch the salt in the seasoning mix to avoid it becoming overly salty. Wondering how to get your seasoning to stick to your popcorn? Add some melted (unsalted!) butter or oil to your popcorn before adding the seasoning so that it will stick to every bite.
If you have any leftover seasoning, you can store it in an airtight container at room temperature for 1 month.

Spice Mix
- 2 Tbsp.
kosher salt
- 2 Tbsp.
light or dark brown sugar
- 1 Tbsp.
plus 1 tsp. smoked paprika
- 1 Tbsp.
freshly ground black pepper

garlic powder
- 2 tsp.
dried oregano
- 2 tsp.
ground cumin
- 1 tsp.
onion powder
Popcorn
- 1/2 cup
popcorn kernels, divided
- 2 Tbsp.
neutral oil
Melted unsalted butter, for tossing
Directions
Spice Mix
- Step 1In a medium bowl, whisk salt, brown sugar, paprika, pepper, garlic powder, oregano, cumin, and onion powder until combined. Set aside until ready to use. (If using store-bought popcorn, skip to step 3 below.)
- Step 2Make Ahead: Spice mix can be made 1 month ahead. Store in an airtight container at room temperature.
Popcorn
- Step 1In a large pot, toss half of popcorn with oil. Cover pot and cook over medium-high heat until kernels start to pop, about 2 minutes. Add remaining popcorn, cover, and shake pot once or twice to distribute. Remove from heat and let sit 1 minute.
- Step 2Return pot to medium heat. With lid slightly ajar, cook, shaking every 30 seconds, until popping slows to 1 to 2 pops per second, 2 to 3 minutes.
- Step 3Transfer popcorn to a large bowl. Add some butter and toss to coat. Add some (not all) seasoning to taste and toss again to coat.
