We’ll say it—brown sugar cinnamon is THE superior Pop-Tart flavor. Whether you eat them straight out of the package or pop them in the toaster, the combo of caramel brown sugar combined with cozy cinnamon almost can’t be beat. The only thing better? Perfecting that flavor at home in the form of these blondies. These blondies are not only much easier and quicker to make than the crust of a Pop-Tart, but you also get the perfect chewiness of everyone’s favorite dessert bar. They’re great for sharing at everything from picnics to potlucks, and we wouldn’t judge if you enjoyed one for a nostalgic on-the-go breakfast too.
To give blondies that Pop-Tart flair, we top them with a brown sugar cinnamon crumble while baking, then top the whole thing with icing once they are cooled. Feel free to just drizzle it over the blondies or go full Pop-Tart mode and coat the entire top. We went classic and didn’t add any additional decorations, but these would also be ideal with sprinkles for a celebration too.

Ingredients
Batter
Cooking spray
- 3/4 cup
(1 1/2 sticks) unsalted butter, melted
- 3/4 cup
(160 g.) packed light brown sugar
- 1/4 cup
(50 g.) granulated sugar
- 1
large egg
- 1
large egg yolk
- 1 tsp.
pure vanilla extract
- 2 cups
(240 g.) all-purpose flour
- 1/2 tsp.
kosher salt
Topping
- 3/4 cup
(160 g.) packed light brown sugar
- 2 tsp.
ground cinnamon
- 4 Tbsp.
unsalted butter, melted
Icing
- 1 cup
(120 g.) confectioners' sugar
- 2 Tbsp.
light brown sugar
- 2 Tbsp.
milk
- 1 Tbsp.
dark corn syrup
Directions
Batter
- Step 1Preheat oven to 350°. Line a 9" x 9" pan with parchment and grease with cooking spray.
- Step 2In a large bowl, whisk butter, brown sugar, and granulated sugar until smooth. Add egg, egg yolk, and vanilla and whisk until combined. Add flour and salt and mix with a rubber spatula until just combined.
- Step 3Spread batter in prepared pan in an even layer.
Topping
- Step 1In a medium bowl, whisk brown sugar, cinnamon, and butter until combined.
- Step 2Top batter with brown sugar mixture, leaving a 1/2" border around the edges.
- Step 3Bake blondies until edges are lightly golden and set and center feels a little soft, about 30 minutes. Let cool.
Icing
- Step 1In a small bowl, mix confectioners’ sugar, brown sugar, milk, and corn syrup until smooth.
- Step 2Drizzle icing over blondies. Let sit at room temperature until icing is set, about 20 minutes.
- Step 3Slice into squares to serve.
