Ingredients

watermelon (preferably seedless)

Crushed red pepper flakes (optional)
Extra-virgin olive oil, for drizzling

Directions

1. Step 1In a small heatproof bowl, cover onion with hot water. Let sit 5 minutes.
2. Step 2Meanwhile, cut a slice of watermelon crosswise from the center, about a 1 1/2"-thick round; reserve remaining watermelon for snacking. Arrange on a baking sheet. Layer cucumber slices on top of watermelon. Sprinkle with feta and mint.
3. Step 3Drain onion and pat dry with paper towels. Layer onion on top of cucumber; season with a pinch of salt and a pinch of red pepper flakes (if using). Drizzle with oil.
4. Step 4Slice into wedges to serve.
