
We just found your new favorite jelly bean flavor—it’s bellini! This drink is for adults that enjoy the childlike joy of jelly beans. Sip each layer one by one or mix the cocktail together for a more tutti frutti kind of vibe. No matter what, make sure to present the cocktail in its layered form for the cutest Easter drink (you won't even miss an Easter basket with one of these in your hand).
To make this bellini, you’ll need a champagne flute and a bar spoon (or an iced tea spoon or teaspoon that fits inside the flute). The key to layering a drink is slow pours and patience. Start by mixing the grenadine and some of the liquid under the solidified fat from coconut cream in the bottom of the glass. Then place the bar spoon against the glass inside the flute and slowly pour a layer of blue curacao and coconut cream liquid into the glass, letting it float above the red layer. It’s okay if some of it mixes a bit! Then repeat with a final layer of pineapple juice and sparkling wine to top it off.
For the cutest garnish, skewer jelly beans (we used Jelly Belly) and serve that on top. Any flavor goes here, but pink, yellow, and blue make for a cute match.

Ingredients
- 1/2 oz.
store-bought or homemade grenadine syrup, chilled
- 1 1/2 oz.
liquid from under solidified fat of canned coconut cream, chilled, divided
- 1/2 oz.
blue curacao, chilled
- 1 oz.
pineapple juice, chilled
- 1 oz.
sparkling wine, chilled
Jelly Belly jelly beans, for serving (optional)
Directions
- Step 1In a champagne flute, stir grenadine and 1/2 ounce coconut cream liquid until combined.
- Step 2In a liquid measuring cup, combine curacao and remaining 1 ounce coconut cream liquid. Float curacao mixture on top of first layer by very slowly pouring over the back of a bar spoon or iced tea spoon. Using spoon, discard any foamy red bits on top of drink, if needed. Wipe spoon and measuring cup clean.
- Step 3In same cup, combine pineapple juice and sparkling wine. Float pineapple juice mixture on top of second layer by very slowly pouring over back of bar spoon or tea spoon.
- Step 4If desired, skewer your favorite flavor jelly bellies and serve over cocktail.
