
Nothing hits like a frosty piña colada on a hot day. With rum or without, the combination of coconut, pineapple, and lime is pretty unbeatable. In fact, we love piña colada flavors so much, we've put them in truffles, fried pineapple rings, cheesecake bars, even pancakes! Some days we want a piña colada, but we don’t want to get out the blender. For these times, may we suggest the delightfully effervescent and very easy piña colada spritz? It’s fast, fuss-free, and still hits all the right notes. What makes this quick, bubbly drink so delicious? Keep reading on to find out:
All. The. Coconut:
While Delish’s favorite frozen piña colada uses coconut cream and sweetened condensed milk, a mix of coconut rum and a little bit of cream of coconut provides tons of tropical flavor with less sweetness in this recipe. Want even more coconut? Swap out the club soda for a coconut seltzer.
Pineapple, two ways:
For the spritz, we like ice-cold pineapple juice in the drink and a wedge of fresh pineapple to garnish the glass. If you’re making a big batch of spritzes for a BBQ or a poolside party, you can freeze fresh pineapple chunks to use in place of ice. This keeps things icy cold without diluting the drink.
The limes:
One juicy lime wedge will yield about 1/4 ounce of fresh juice. Once you have mixed in the lime juice, you can add the juiced wedge to the drink or cut a thin slice to decorate the glass.
The bubbles:
Spritzes require bubbles, and either plain seltzer or club soda gives the perfect amount of fizz to this spritz. A splash of Champagne or Prosecco would be delicious too.

Ingredients
- 2 oz.
coconut rum
- 2 oz.
pineapple juice
- 1/4 oz.
(or more) fresh lime juice
- 2 Tbsp.
cream of coconut
Ice
- 4 oz.
plain or coconut seltzer
Maraschino cherries and/or pineapple wedges, for serving (optional)
Directions
- Step 1In a blender, pulse rum, pineapple juice, lime juice, and cream of coconut until smooth. Taste and add more lime juice, if desired.
- Step 2Transfer to a large wine glass. Fill glass with ice, then top off with seltzer. Garnish with a cherry and pineapple wedge (if using).
