
We've taken all the elements we love from a baba ghanoush mezze platter and made them portable in this open-faced sandwich. The silky eggplant dip is spread on a sesame bagel, then layered with crunchy cucumbers and radishes, peppery arugula, and lemony sumac-marinated onions. We sprinkle on some za’atar for an added zesty layer of flavor.
Preparing the components ahead of time will make life easier because once everything is prepped, it comes together rather quickly. The baba ghanoush can be made up to 2 days ahead. The day before assembling the bagels, the onions can be marinated, and the cucumbers and radishes can be sliced. It’s also best to enjoy the open-faced sandwiches immediately after assembling.

Ingredients
Baba Ghanoush

large eggplant (1 to 1 1/2 lb.), halved lengthwise

cloves garlic, grated or finely chopped

Sumac Onions
- 1
small red onion, sliced (about 1 c.)
- 1 Tbsp.
fresh lemon juice
- 1 tsp.
sumac
- 1/4 tsp.

Assembly
- 4
sesame bagels, halved, toasted
Za'atar, for sprinkling
- 3
mini cucumbers, thinly sliced
- 4
radishes, thinly sliced

Directions
Baba Ghanoush
- Step 1Place a rack in top third of oven; heat broiler on high. On a foil-lined baking sheet, arrange eggplant cut side down. Broil eggplant until charred on the outside and a knife inserted into the center gives no resistance, about 20 minutes. Turn eggplant and continue to broil until browned in spots, about 5 minutes more.
- Step 2Transfer eggplant to a colander and let drain until cool enough to handle, about 10 minutes.
- Step 3Scoop out flesh and transfer to a large bowl. Add garlic, tahini, oil, lemon juice, and red pepper (if using). Using a fork, mash until eggplant is broken down and well combined; season with salt and black pepper. Cover and refrigerate at least 30 minutes or, preferably, up to overnight.
Sumac Onions
While eggplant roasts, in a small bowl, combine onions, lemon juice, sumac, and salt. Using your hands, massage seasonings into onions. Let marinate, stirring occasionally, until ready to use.
Assembly
- Step 1Divide baba ghanoush among bagel halves, then sprinkle with za’atar.
- Step 2Layer each bagel half with cucumbers and radishes; season with salt. Top with arugula, onions, and a drizzle of oil; season with salt and more za’taar, if desired.
