
Lavash—the ultra-thin flatbread that's integral to Armenian cuisine—is great with pretty much everything. Traditionally baked on the hot walls of a clay oven, it boasts a deliciously subtle smoky flavor and slightly chewy texture that's perfect for dipping, wrapping, and scooping up all sorts of foods. It's also great for wraps: It's large enough to contain a lot of filling, but thin enough to give every ingredient a chance to shine.
This particular wrap is loaded with bright flavors and satisfying ingredients, making it hearty enough to keep you full until dinner, but not so heavy you require a post-lunch nap. Filled with a zingy arugula-dill salad, sliced turkey, roasted red peppers, and crunchy cucumbers, and sealed with a creamy goat cheese spread, it's exactly the kind of colorful lunch we crave to brighten up our weekdays.

Ingredients

scallion, thinly sliced
- 4 oz.
crumbled goat cheese
- 4 oz.
plain whole-milk Greek yogurt
- 3 tsp.
extra-virgin olive oil, divided

loosely packed arugula
- 1/2 cup
coarsely chopped fresh dill
- 1 tsp.
fresh lemon juice

store-bought or homemade lavash
- 1/2 lb.
sliced deli turkey, divided

roasted red peppers, cut into thin strips, divided (about 1 c.)

Persian (or 2 English) cucumbers, cut lengthwise into quarters, divided
Directions
- Step 1In a medium bowl, combine scallion, goat cheese, yogurt, and 2 teaspoons oil; season with salt and pepper.
- Step 2In a large bowl, gently toss arugula, dill, lemon juice, and remaining 1 teaspoon oil to combine.
- Step 3On a work surface, lay out lavash. Spread goat cheese mixture in an even layer over bread, leaving a 1" border on all sides. Divide turkey, red peppers, cucumbers, and arugula salad among wraps.
- Step 4Pull one half of lavash up and over filling like a burrito, then tightly wrap to enclose. Tuck in ends to seal. Cut in half before serving.
