
Inspired by the Greek version of baklava, this crisp is brimming with tart berries, warm spices, orange and lemon juice and zest, honey, and walnuts. To stay true to the Greek theme, we used olive oil instead of butter in the topping. For the mixed berries, we opted for a blend of strawberries, blueberries, raspberries, and blackberries, but any combination will work.
The berries don’t need to be thawed before using, and the topping can be assembled and frozen in a freezer-safe bag up to 1 week in advance. If you make the topping ahead, there’s no need to thaw it before baking; plus, it can be stored for up to 3 months. This makes it a great make-ahead dessert with minimal prep that you can whip up at a moment's notice. Top with whipped cream for the ultimate summer treat.

Crisp Topping
- 1 1/2 cups
raw walnuts
- 1/2 cup
extra-virgin olive oil
- 1/4 cup
honey

old-fashioned rolled oats

superfine blanched almond flour

Directions
Crisp Topping
- Step 1Preheat oven to 375°. Spread walnuts on a baking sheet and toast until golden brown and fragrant, 5 to 7 minutes. Let cool, then transfer to a cutting board and coarsely chop.
- Step 2Meanwhile, in a liquid measuring cup, whisk oil and honey until combined.
- Step 3In a medium bowl, combine oats, flour, orange zest, lemon zest, cinnamon, cloves, and salt. Add walnuts and oil mixture. Using a fork, stir until fully incorporated and mixture resembles wet sand.
Filling
- Step 1In a large bowl, whisk honey, orange juice, and lemon juice until combined. Add cornstarch and a pinch of salt and whisk until no lumps of cornstarch remain. Add fruit and toss well to coat.
- Step 2Transfer filling to a 2 1/2-quart baking dish. Sprinkle topping over berries.
- Step 3Bake crisp, tenting with foil if topping is browning too quickly, until berries are bubbling along the edges and topping is golden brown, about 45 minutes. Let crisp rest 10 minutes to let filling set before serving.
