No matter the time of year, one sip of this coconut and pineapple spritz will transform your mindset right to a tropical beach or beautiful sunny day, making this the perfect cocktail for any season. To get the max pineapple flavor, muddle fresh pineapple with brown sugar in the bottom of a cocktail shaker to create a richly flavored juice. Then strain it and mix it with rum and coconut water for just the right amount of coconut flavor without the richness of coconut milk. Top off the spritz with seltzer for that bubbly finish (if you're craving a slightly stiffer drink, pour in sparkling wine, prosecco, or cava in place of the seltzer) and squeeze a lime wedge into the glass for a touch of citrus.
For the garnish, pull some nice green pineapple leaves off of the fruit before discarding them; they make a nice tropical topping alongside a pineapple wedge.

Ingredients
- 1/2 cup
small pineapple chunks, plus 1 pineapple wedge and 2 pineapple leaves
- 1 Tbsp.
packed light brown sugar
- 1 1/2 oz.
rum
Ice
- 1 oz.
coconut water
Seltzer water, for topping off
- 1
lime wedge
Directions
- Step 1In a cocktail shaker, muddle pineapple chunks and brown sugar until pineapple is smashed to a puree and releases juices. Add rum, then fill cocktail shaker with ice. Cover and vigorously shake until outside of shaker is very frosty, about 20 seconds. Strain into a pint or highball glass, shaking and tapping shaker to ensure all liquid is strained.
- Step 2Fill glass halfway with ice and pour coconut water over. Top off with seltzer water. Squeeze juice from lime wedge into glass and drop wedge into glass. Garnish with pineapple wedge and leaves.
