Is any dessert more summer-worthy than a sweet and bubbling fruit cobbler? I think not. Delish has created our fair share of cobbler recipes, from our berry campfire cobbler to blueberry to classic peach. For this recipe, I decided that blackberry deserved its time in the spotlight. While it’s often overlooked for more popular summer fruits, blackberry’s power shouldn’t be underestimated. Sweet yet perfectly tart, this fruit gets its chance to shine in this warm blackberry cobbler, complete with a perfect biscuit topping. Here’s everything you need to know.

To get started on our blackberry filling, we will toss together blackberries, sugar, lemon juice and zest, cornstarch, vanilla, and salt in a large bowl. Mix until combined then set it aside for 30 minutes.
Meanwhile, preheat the oven to 350º. Grab another large bowl, and whisk together the flour, baking powder, sugar, and salt. Once combined, work in the cold cubes of butter with your hands until incorporated, then stir in the egg and milk until just combined—no need to overwork it.
Grab the blackberry mixture, and transfer to an ovenproof skillet. Top with dollops of the dough, then brush with an egg wash and sprinkle with coarse sugar.
Bake until the biscuits are deeply golden, and the blackberry mixture is bubbling. Once done, let cool for at least 10 minutes, then serve with ice cream.

In a large bowl, toss blackberries, granulated sugar, lemon zest, lemon juice, cornstarch, vanilla, and salt. Let sit 30 minutes.
