Hot Fudge Oreo Cheesecake Bars

Chocolate, chocolate, and more chocolate. These cheesecake bars are surprisingly simple to make and are filled with layers of hot fudge and Oreo cookies. If milk is an Oreo’s best friend, then cheesecake must be a close second. My simple, crunchy Oreo crust comes together like a giant Oreo cookie base, with the hot fudge and cream cheese center filling in for the Oreo stuffing. The chocolate dream doesn't end there, though, as we top the bars with a healthy drizzle of hot fudge and crushed Oreo cookies.
While this recipe is one where patience is required—the cheesecake filling has to be left to chill for at least 3 hours—I guarantee you will find the end result well worth the wait. Plus, if you don’t have a spare 3 hours on the day you plan to serve the bars, the cheesecake can be baked a day ahead of time and left in the fridge overnight, until ready to serve.

Ingredients
Crust
- 24
Oreos, crushed
- 6 Tbsp.
butter, melted
Pinch of kosher salt
Cheesecake
- 2
(8-oz) cream cheese bars, softened
- 1/2 cup
granulated sugar
- 1/4 cup
light brown sugar
- 1/4 cup
cocoa powder
- 2
eggs
- 1 tsp.
pure vanilla extract
Pinch of salt
- 1 cup
hot fudge sauce, plus more for garnish
- 1/2 cup
chopped Oreos, for garnish
Directions
- Step 1Make crust: Preheat oven to 325° and grease an 8"-x-8" pan with cooking spray. In a medium bowl, mix crushed Oreos, butter, and salt until combined. Press tightly into prepared pan.
- Step 2Make cheesecake: In a large bowl, beat together cream cheese, granulated sugar, light brown sugar, and cocoa powder. Add eggs one at a time, then add vanilla and salt and beat until combined. Fold in hot fudge sauce. Pour mixture over crust.
- Step 3Bake until only slightly jiggly, about 40 minutes. Let cool slightly, then refrigerate until firm, 3 hours, or up to overnight.
- Step 4Drizzle with more hot fudge and sprinkle with Oreos. Slice into bars and serve.
