Tiramisu Poke Cake

Ingredients
- Cooking spray, for pan
- 1 box yellow cake mix, plus ingredients called for on box
- 2 boxes vanilla pudding mix
- 3 cups milk
- 1 Tbsp. instant coffee
- 2 cups heavy cream
- 2 Tbsp. sugar
- 1 tsp. pure vanilla extract
- pinch of kosher salt
- 1/2 cup cocoa powder
- 1/4 cup chocolate shavings
Directions
- Step 1Preheat oven to 350º and grease and flour a 9"-x-13" cake pan. Prepare yellow cake mix according to box instructions. Pour batter into prepared pan and bake until a toothpick inserted in the center comes out clean, about 25 minutes. Let cool 10 minutes.
- Step 2Meanwhile, prepare pudding: In a large bowl or measuring cup, whisk instant espresso into milk. In a large bowl, whisk together pudding packets and coffee flavored milk until thick. Set aside.
- Step 3In another large bowl, beat cream, sugar, vanilla and a pinch of salt until stiff peaks form. Set aside.
- Step 4 Using the bottom of a wooden spoon, poke holes all over the cake. Spread pudding mixture on top, making sure to fill poke holes. Top with whipped cream and a dusting of cocoa powder. Sprinkle with chocolate shavings and serve.
