We'll take a classic mimosa at any brunch, but when we're looking for an extra-sweet upgrade, we turn to these strawberry shortcake mimosas. Vanilla vodka, strawberry ice cream, whipped cream, and crushed Nilla Wafers transform the classic brunch cocktail into a dessert + drink in one. Whether orange juice just isn't cutting it, you're craving a dessert cocktail, or just can't get enough of the classic strawberry shortcake, turn to these adorable mimosas.
These mimosas can be as easy or as complicated as you like. Use your favorite storebought strawberry ice cream, or make your own if you're feeling fancy. Same goes for the whipped cream: buy storebought, or make our best-ever whipped cream to use on all your favorite desserts (and drinks!).

Ingredients
- 10
strawberries
- 1/2 cup
finely crushed Nilla wafers
- 2/3 cup
strawberry ice cream
- 10 oz.
vanilla vodka
- 1
bottle Champagne or Prosecco
Whipped cream
Directions
- Step 1Run a sliced strawberry around the rim of Champagne flutes. Dip each rim in Nilla crumbs.
- Step 2Into each flute, drop 1 tablespoon strawberry ice cream, then add 1 ounce vodka and top with Prosecco.
- Step 3Top with whipped cream, a sprinkle of Nilla crumbs, and a strawberry for garnish. Serve.
