No matter the occasion, this dip is sure to get the party started. All you need are cheese, beer, a few staple spices and a skillet, and you’ve got a crowd-pleasing appetizer on your hands that will be the star of any campfire feast or game day spread. We went with a lager for our beer of choice in this recipe, but feel free to get creative. If Guinness is your thing, that will totally work. If you prefer bolder, hoppier IPAs, those would also be great—but be prepared for a punchy, strong flavor.
We love making this skillet dip over a campfire, but it’s not necessary. If you’re making this dip in the dead of winter (or simply don’t feel like starting a fire), refer to our pretzel ring beer cheese dip recipe, or simply bake this dip in an oven-proof skillet for around 30 minutes, keeping an eye on it.

Ingredients

shredded cheddar
- 1
(8-oz. block) cream cheese, softened
- 2
cloves garlic, minced
- 1 Tbsp.
freshly chopped chives, plus more for garnish
- 1 cup
lager beer
Kosher salt
Pinch of cayenne pepper
Toasted baguette slices, for serving
Directions
- Step 1Place a grate over a campfire. In a large cast-iron skillet, add cheddar, cream cheese, garlic, chives, and beer and season with salt and cayenne. Cover with foil.
- Step 2Cook over campfire until melty, about 15 minutes. Serve with baguette slices.
