When we're in need of a crowd-pleasing potluck or BBQ side, this bacon and jalapeño version is the one we turn to. With crispy bacon, sweet corn, and hot jalapeño all tossed in a creamy mayo-based sauce, this easy side (ready in 10 minutes!) will become your go-to recipe all summer long.
Along with being easy, this salad is completely versatile. You can use frozen or fresh corn in this recipe; grilled corn is also a delicious option if you're craving a smoky flavor in this salad. Not a fan of heat? Use half the jalapeño and adjust to taste. If you're not a mayo fan, you can sub it out for a combination of Greek yogurt and sour cream. This is your corn salad—get creative with it!

slices cooked bacon

cilantro

jalapeño, minced
- 1/3 cup
mayonnaise
Juice of 2 limes
- 1 tsp.
chili powder
- 1 tsp.
garlic powder

Directions
- Step 1In a large bowl, combine all ingredients. Stir until ingredients are completely mixed and coated in dressing. Garnish with herbs, if desired, then serve.
