Grilled Ranch Potatoes

Potatoes are great. Boiled, mashed, baked: we love it all. And there is no reason why your grill can't get in on the phone either. Grilling baby potatoes are the perfect way to incorporate creamy, delicious potatoes to your next BBQ without having to step foot inside the kitchen. We take these spuds to the next level with two levels of Ranch goodness. The seasoning adds some salty, umami flavor while the dressing provides that cooling, tangy creaminess. Toss these on the grill along side some Chicken Bacon Ranch Foil Packets for the perfect Summer Ranch Cookout.
A couple quick tips for this recipe: If you want to use wooden skewers, make sure to soak them for at least 15 minutes before threading on your potatoes. This will keep the wood from scorching. You'll also want to keep a careful eye on the potatoes as they cook. The skins can burn quickly!

Ingredients
- 2 lb.
baby potatoes, halved
- 1/4 Tbsp.
extra-virgin olive oil
Juice of 1/2 a lemon
- 1/2
packet ranch seasoning
kosher salt
Freshly ground black pepper
Ranch dressing, for drizzling
Chopped fresh chives, for garnish
Directions
- Step 1Preheat grill to medium heat. In a large bowl, toss potatoes with olive oil, lemon juice, and ranch seasoning. Season with salt and pepper.
- Step 2Thread potatoes on skewers and grill until tender and lightly charred, 15 minutes.
- Step 3Drizzle with ranch and garnish with chives.
