Cooking over the campfire is one of our favorite things to do, and throwing everything into a foil pack makes it that much easier! if you're looking for the easiest side dish to your camping meal around the fire, then these cheesy potatoes are just the thing. These cook up fast, are perfectly customizable, and go with practically any main.
We topped these potatoes with shredded mozzarella, Parmesan, fresh parsley and crushed red pepper flakes, but feel free to get creative with these taters. Add your favorite melty cheese, switch out the seasonings, or up the red pepper flakes to kick up the heat. Trust us—you really can't mess these babies up.
Tip: If you don't want to make these over the fire or grill, they also work great in the oven at 425º. Keep in mind that you might have to parboil the potatoes before cooking in the oven in order to ensure they cook all the way through.

Ingredients
- 2 lb.
mini Yukon Gold potatoes, quartered
- 2 Tbsp.
extra-virgin olive oil
- 1 tsp.
garlic powder
- 1 tsp.
dried oregano
Kosher salt
Freshly ground black pepper
- 2 cups
shredded mozzarella
- 1 cup
freshly grated Parmesan
Chopped fresh parsley, for garnish
Crushed red pepper flakes, for garnish
Directions
- Step 1Preheat the grill to medium-high, or preheat the oven to 425º.
- Step 2Cut 4 large pieces of foil about 10" long and spray with nonstick cooking spray. In a large bowl, toss potatoes with olive oil, garlic powder, and oregano and season with salt and pepper.
- Step 3Divide potatoes between foil pieces, then fold the foil packets crosswise to completely cover the potatoes. Roll the top and bottom edges to seal them closed.
- Step 4Place foil packets on the grill and cook 10 minutes. Flip and cook 10 minutes more. (Alternately, cook in the oven for 20 minutes.)
- Step 5Unwrap the foil packets and sprinkle mozzarella and Parmesan on top of the potatoes. Fold foil back over the potatoes and cook until cheese is melty, about 3 to 5 minutes.
- Step 6Top with parsley and red pepper flakes and serve warm.
