Old-Fashioned Brioche Bread Pudding

Ingredients
- Cooking spray
- 2 cups half-and-half
- 1 cup whole milk
- 5 large eggs
- 1 cup granulated sugar
- 4 Tbsp. unsalted butter, melted
- 3 Tbsp. bourbon
- 1 Tbsp. orange zest, plus 2 tbsp. orange juice
- 2 tsp. pure vanilla extract
- 1 tsp. bitters (such as Peychaud's)
- 1 tsp. kosher salt
- 1 (16-oz.) loaf brioche, cut into 1" cubes
- 1 1/2 cups frozen pitted cherries, halved
- 2 Tbsp. turbinado sugar
Directions
- Step 1Preheat oven to 350 degrees F. Lightly grease 8 (10-ounce) ramekins. Whisk together half-and-half, milk, eggs, granulated sugar, butter, bourbon, orange zest and juice, vanilla, bitters, and salt in a bowl.
- Step 2Arrange bread cubes and cherries in prepared ramekins. Slowly pour egg mixture over bread, dividing evenly. Cover and let stand 1 hour.
- Step 3Sprinkle turbinado sugar over bread pudding, dividing evenly. Bake until puffed and golden brown, 30 to 35 minutes. Serve warm.
