Ingredients
- 6 Tbsp. unsalted butter
- 1 sweet onion, chopped
- 2 garlic cloves, chopped
- 1/3 cup all-purpose flour
- 6 cups chicken stock
- 3/4 cup dry white wine
- 2 Tbsp. chopped fresh flat-leaf parsley
- 2 Tbsp. chopped fresh chives
- 1 Tbsp. chopped fresh thyme
- kosher salt and freshly ground black pepper
Directions
- Step 1Melt butter in a large straight-sided skillet over medium-high heat. Add onion, and cook, stirring occasionally, until golden brown, 10 to 12 minutes. Add garlic, and cook 1 minute. Sprinkle flour over onion, and cook, whisking, until flour is golden brown, 1 minute.
- Step 2Slowly whisk in stock and wine. Cook, whisking often, until reduced to 3 cups or until gravy reaches desired thickness, 45 to 50 minutes.
- Step 3Strain through a fine mesh sieve; discard solids. Stir in parsley, chives, and thyme. Season with salt and pepper.
