Buttery French Peas

Ingredients
- 1 small chopped shallot
- 2 Tbsp. unsalted butter, divided
- 2 cups frozen peas
- 1/4 oz. chicken stock
- 3/4 tsp. herbes de Provence
- 2 tsp. lemon zest
- 2 tsp. lemon juice
- kosher salt
- Freshly ground black pepper
Directions
- Step 1Cook shallot in 1 tablespoon butter in a medium skillet over medium heat until softened, 2 to 3 minutes.
- Step 2Stir in frozen peas, chicken stock, and herbes de Provence. Cook, covered, until tender and warm, 4 to 6 minutes. Stir in remaining butter, lemon zest and lemon juice. Season with salt and pepper.
