If you love our taco lasagna, then get ready to meet a new staple in your weeknight dinner rotation: my cheesy taco bake. Instead of using tortillas, like we do in our lasagnchiladas, I'm layering my seasoned ground beef, cheese, and tomato-sour cream mixture on top of tortilla chips for added texture. I'm calling this a taco bake because of its Tex-Mex flavors, but you can think of it more like a nacho bake. Whatever you want to call it, it's an easy way to serve a crowd in an hour with very little effort on your part.
This recipe provides a perfect base for you to layer on any toppings you please. I definitely recommend a dollop of sour cream and freshly chopped cilantro, but you can go crazy after that. Add on some pico de gallo, avocado slices, hot sauce, or whatever you please to really make this dinner your own.

Ingredients

extra-virgin olive oil
- 1
yellow onion, finely chopped

ground beef
- 2
garlic cloves, minced

(14.5-oz.) can fire-roasted tomatoes
- 3/4 cup
water
- 1/2 cup
sour cream
- 2 tsp.
chili powder
- 2 tsp.
ground cumin
- 1/4 tsp.
cayenne
- 1/4 cup
freshly chopped cilantro, plus more for serving
- 1
(11- to 12-oz.) bag tortilla chips (preferably restaurant-style)
- 2 cups
shredded cheddar
- 2 cups
shredded pepper Jack
Directions
- Step 1Arrange a rack in center of oven; preheat to 350°. In a large skillet over medium heat, heat oil. Add onion; season with salt. Cook, stirring occasionally, until softened, about 7 minutes. Add ground beef and cook, stirring, until browned, about 7 minutes. Drain fat, if desired.
- Step 2Add garlic, tomatoes, water, sour cream, chili powder, cumin, and cayenne and stir until combined. Cook, stirring, until slightly thickened, about 5 minutes. Stir in cilantro.
- Step 3In a 13” x 9” baking dish, spread tortilla chips in an even layer. Top with half of ground beef mixture, half of cheddar, and half of pepper Jack. Repeat for a second layer. Top with more cilantro.
- Step 4Bake taco bake until cheese is melted and tortilla chips are softened, about 20 minutes. Let cool 5 minutes before slicing.
