Cucumber-Chile Limeade

Ingredients
- 14 limes
- 2 1/4 cups cold water
- 1 cup sugar
- Pinch salt
- 1 large seedless (English) cucumber, coarsely grated
- 3 serrano chiles, thinly sliced
Directions
- Step 1From limes, with vegetable peeler, peel 8 strips zest. Squeeze 1 1⁄2 cup juice; refrigerate.
- Step 2In 2-quart saucepot, combine water, sugar, and salt. Heat on medium until sugar dissolves, stirring occasionally. Remove from heat. Add cucumber, chiles, and lime zest strips. Refrigerate 3 hours. Through mesh sieve, strain syrup into serving pitcher, pushing on solids. Discard solids. To pitcher, add reserved lime juice. Refrigerate limeade until cold, about 1 hour. Makes about 4 1⁄2 cups. Keeps, refrigerated, up to 1 week.
