Saucy Shrimp Curry

Ingredients
- 2 Tbsp. canola oil
- 2 medium shallots, thinly sliced
- 1/2 tsp. curry powder
- 1/2 tsp. ground cumin
- 3 cloves garlic, finely chopped
- 2/3 cup ketchup
- 1/2 tsp. cayenne (ground red) pepper
- 1 lb. (26- to 30-ct.) shelled, deveined shrimp
- Cooked basmati rice or toasted naan, for serving
- Fresh cilantro leaves, for garnish
Directions
- Step 1In 12" nonstick skillet, heat oil on medium. Add shallots, curry powder, cumin, and 1⁄2 teaspoon black pepper. Cook 3 minutes, stirring occasionally. Add garlic; cook 1 minute, stirring. Add ketchup, cayenne, and 1⁄4 teaspoon salt. Cook 2 minutes or until thickened, stirring frequently.
- Step 2To skillet, add shrimp. Cook 3 minutes or until shrimp are just opaque, stirring occasionally. Serve with rice or naan and garnish with cilantro.
