This easy appetizer—or satisfying midday snack—is perfect to serve up at any fancy dinner party or festive celebration. How to Make Antipasto Skewers
INGREDIENTS
- Olive Oil: What is a good antipasto platter without glugs and glugs of olive oil? In this recipe, both the mozzarella balls and tortellini are tossed in oil, so be sure to use a good quality extra virgin olive oil.
- Fresh Cheese Tortellini: These are the star of the show, so use fresh tortellini, which is typically found in the refrigerated section. Since these skewers will be served at room temperature, we're using cheese-filled tortellini over a meat filling.
- Mozzarella: While different sizes and shapes of mozzarella could work here, we recommend using small mozzarella balls, like Ciliegine, which are cherry-sized and fit right in with the rest of our one-bite ingredients.
- Balsamic Vinegar, Italian Seasoning, Red Pepper Flakes, and Black Pepper: Each of our antipasto ingredients are deliciously snackable on their own, but we’re leveling up the tortellini by coating them in balsamic vinegar and marinating the mozzarella in a mixture of olive oil and seasonings.
- Sliced Salami: Tap in to your inner charcuterie board artist and fold the salami slices into triangles to create pretty and practical layers on the skewer.
- Roasted Red Peppers and Artichoke Hearts: Take a trip down the canned and jarred foods aisle for these versatile ingredients that make this recipe oh-so-simple. Both the red peppers and artichoke hearts will need to be cut into bit-sized pieces before assembly.
- Basil: Most of the components on these antipasto skewers are jarred, canned, or preserved, so a little fresh basil goes a long way in adding in a bright, herby layer of flavor.
- Green Olives: Olives bring a salty, briny punch to the table, but if you’re not an olive fan, you could substitute them for pepperoncini peppers or even cherry tomatoes.
STEP-BY-STEP INSTRUCTIONS
Cook fresh cheese tortellini to al dente in a large pot of boiling water to package instructions. Drain cooked cheese tortellini well through a colander and transfer to a large bowl. No soggy tortellini here!
Season the cooked tortellini with salt and pepper. Then, drizzle with balsamic vinegar, ¼ cup of olive oil and toss to combine. Set aside and allow the tortellini to soak up the marinade while working on the other skewer components.
Next, marinate the mozzarella. Add the small mozzarella balls to a small bowl and season with Italian seasoning, red pepper flakes (for a little heat) and the rest of the olive oil (¼ cup). Mix well and set aside.
Now, it’s time to build your skewers. Layer a piece of mozzarella, folded salami, cooked tortellini, fresh basil, chopped roasted red pepper and artichoke, and a green olive — or your choice of toppings. Serve immediately and watch how quickly they disappear or make-ahead and refrigerate until you’re ready.

Recipe Tips
- Can I make these vegetarian? Absolutely! If you're serving vegetarian guests, simply leave off the salami, and replace with any veggie (or extra mozzarella) your heart desires.
- Can I make these ahead of time? These skewers are a great make-ahead appetizer to prepare the night or morning before your upcoming party. Assemble your skewers, then refrigerate until you're ready to serve.
- What should I add to my skewers? These skewers are completely customizable—feel free to experiment with them! We went with many of the classic components: mozzarella, salami, red peppers, artichoke hearts, and even cheesy tortellini. If you're not a fan of something, feel totally free to replace it with something else. Not an olives lover? Pepperoncini peppers would be a delicious substitute. Tomatoes are also always a welcome addition to any antipasto spread. If salami isn't your thing, feel free to replace it with buttery prosciutto instead.
