Sausage & Peppers Foil Pack

When we need a summer dinner in a pinch, we turn to foil packs again and again. Their beauty is in their simplicity: toss your ingredients in the foil along with your seasonings, grill, and dig in! While we have many variations on this cooking method that we can't get enough of (we're looking at you, Hawaiian chicken), this sausage & peppers recipe is one of our favorites. Filled with bell peppers, onions, and charred Italian sausage links, these packs are filled to the brim with hearty, classic flavors. Plus, this recipe only requires 7 ingredients (including salt and peppers), so you don't have to trek to your campsite with a cooler full of ingredients.

Ingredients

Italian sausage links
- 4
bell peppers, thinly sliced
- 2
large onions, thinly sliced
- 1/4 cup
extra-virgin olive oil, divided
kosher salt
Freshly ground black pepper
Chopped fresh parsley, for garnish
Directions
- Step 1Heat grill to high. Cut 4 sheets of foil about 12" long.
- Step 2Grill sausages until charred, 3 minutes per side, then divide among foil. Top with peppers and onions and drizzle each with 1 tablespoon olive oil, then season with salt and pepper.
- Step 3Fold foil packets crosswise over the sausage and peppers mixture to completely cover the food. Roll top and bottom edges to seal closed.
- Step 4Grill until peppers and onions are tender and sausage is cooked, 13 to 15 minutes.
- Step 5Garnish with parsley and serve.
