Whether you'd rather skip going out or don't live close to the famous pizza spot, recreate the well-loved pie at home with this California Pizza Kitchen's BBQ chicken pizza copycat. The flavor combo of saucy BBQ, tender chicken and creamy ranch just works—it has to be tried to be believed. We thought this pizza couldn't get better, until we discovered a mind-blowing upgrade. The twist? We bake the pizza in an oven-safe skillet, resulting in an extra-crispy crust. It might seem a bit extra, but trust us—it's worth it.

We used refrigerated pizza dough for ease in this recipe, but if you'd prefer, our homemade pizza dough is easy to create, and completely delicious.

Ingredients
- 1 Tbsp.
extra-virgin olive oil, plus more for brushing
- 1
(8-oz.) boneless, skinless chicken breast, cut into 1" pieces
Kosher salt
Freshly ground black pepper
All-purpose flour, for dusting
- 16 oz.
store-bought or homemade pizza dough, room temperature
- 2 Tbsp.
BBQ sauce, plus more for drizzling
- 1/2 cup
shredded cheddar
- 1/2 cup
shredded Fontina
- 1/4
small red onion, thinly sliced
Ranch dressing and thinly sliced chives, for serving
Directions
- Step 1Arrange a rack in upper third of oven; preheat to 450°. In a large skillet over medium-high heat, heat oil. Add chicken; generously season with salt and pepper. Cook, stirring occasionally, until golden brown and cooked through, 6 to 8 minutes.
- Step 2Brush a large (12") ovenproof skillet with oil. On a lightly floured surface, roll dough until circumference matches your skillet. Transfer to prepared skillet.
- Step 3Spread BBQ sauce onto dough, leaving a 1/2" border around the edge. Top with cheddar, Fontina, chicken, then onion. Brush dough with oil; sprinkle with salt.
- Step 4 Bake pizza until crust is crispy and cheeses are melted, about 15 minutes. Carefully transfer skillet to stovetop and cook over high heat until desired color is reached, 1 to 2 minutes more.
- Step 5Drizzle pizza with BBQ sauce and ranch dressing. Top with chives.
