After adding the food coloring to the butter and egg mixture, the dough will be hot pink—don't worry! You'll also be adding some cocoa powder to the recipe, which will give the dough the deep red color you're looking for.
The recipe makes a bit more dough than will fit into the skillet, so be sure to bake a few red velvet cookies on the side with the leftover dough. You can also put the dough balls into the freezer and save them for a rainy day; you never know when you'll want a freshly baked red velvet cookie!
