It seems around only 25% of Americans are able to get a white Christmas, which, in my opinion, is totally unfair. But don't worry—I’ve got you covered with this white Christmas mojito. With this cocktail in hand, you won't even need to pay attention to the forecast. To turn this classic summer drink into a holiday star, I added coconut cream to create that frosty, snow-topped vibe, and pomegranate seeds as a bright and festive garnish. It has all the refreshing flavors of the classic mojito, with a sweet holiday twist.
Using either a blender or a handheld mixer, blend the rum and coconut cream together until combined and very frothy.
Now, it’s time for the most important step: the muddling. Add your mint leaves, lime juice, and sugar to your glass, and muddle for at least 15-20 seconds.
Once the smell of mint has started to fill the room, you can add your ice, then fill the glass with your blended coconut cream and rum mixture.
Grab your seltzer, and top the glass off with a good pour. Give it a sip, then add more seltzer if needed.
Once your drink is ready to go, you can have fun with your garnish. I love a fresh mint sprig and pomegranate seeds, but feel free to get creative.
