
This pumpkin crunch cake combines the best of two worlds: a pumpkin pie bottom with a crunchy cake and pecan topping (yes, a pie topped with cake!). The end result of this layered dessert is a delightful cobbler-like treat fit for any fall occasion. So how do you go about topping pumpkin pie with cake? Look to the trusty method for the OG dump cakes, which were simply made by opening cans of fruit pie filling, like cherry or apple, then “dumping” them into a baking dish and sprinkling the filling with boxed cake mix and a very generous drizzle of melted butter.
Our pumpkin version takes just two more steps and five more minutes to make. Instead of just dumping pumpkin puree into a baking dish, we whisk it with a few ingredients to make a flavorful and sweet pumpkin pie filling. Pumpkin puree on its own doesn’t taste that great—it needs the sugar and pumpkin pie spice to get to the desserts you know and love. Then proceed with the boxed cake and butter topping, adding pecans for extra crunch. Bake it all off, and your dessert is ready to go!

Directions
- Step 1Preheat oven to 350°. Lightly grease a 13"x9" baking dish with cooking spray.
- Step 2In a large bowl, whisk pumpkin puree, milk, eggs, brown sugar, cornstarch, pumpkin pie spice, vanilla, and salt until well combined. Scrape batter into prepared pan and spread in an even layer.
- Step 3Sprinkle cake mix over pumpkin batter, then sprinkle with pecans. Drizzle with butter.
- Step 4Bake cake until a tester inserted into the center comes out clean, 55 to 60 minutes. Transfer pan to a wire rack and let cool.
- Step 5Top with whipped cream and sprinkle with more pumpkin spice.
