When summer rolls around, we can't get enough cucumber salad. Light and refreshing, the simple side dish is perfect for BBQs and picnics alike. When we're looking to shake things up though, we turn to this creamy version. Instead of the classic vinaigrette, we use a creamy dressing in this recipe (made of lemon juice, Greek yogurt, and dill). The result is a refreshing, herby switch on the staple side that will win over any creamy salad lover. Trust us—one bite and all your future BBQs will be changed forever.
Can you use something other than Greek yogurt in the dressing?
We love the tang of Greek yogurt, but this dressing also works well with mayonnaise or sour cream. A combination with any of the three is also very delicious.
What should I serve with this?
We can't make Greek salmon without also making this cucumber salad. It would also go great with grilled chicken, but honestly, it goes pretty well with everything. Serve it alongside your other favorite summer sides for the most refreshing Memorial Day spread!
How long will this keep in the fridge?
Creamy salads like this are best day of, but we've snacked on it for about 4 days with no complaints. Just keep it stored in an airtight container in the refrigerator.

red onion, thinly sliced
- 1/3 cup
plain Greek yogurt
Juice of 1 lemon
- 1 Tbsp.
chopped fresh dill, plus more for serving
Kosher salt
Freshly ground black pepper
Directions
- Step 1In a large bowl, toss cucumbers and onion to combine.
- Step 2In a medium bowl, whisk yogurt, lemon juice, and dill until smooth; season with salt and pepper.
- Step 3Pour dressing over cucumbers and onions and toss to coat. Top with more dill before serving.
