Brie is the perfect thing to add to your morning meals and can take them from ho-hum to exceptional. Take this fluffy, herby omelet—it’s filled with everything you love about baked brie, but it comes together in less than 2 minutes in the pan, meaning you can enjoy its quintessential melty-gooeyness in no time. If you love the sweet-savory thing brie works so well with, you can also try dolloping the top of the cheese with apricot (or your favorite) jam before folding over your omelet at the end. Once you try it, you may never go back to plain old eggs for breakfast again.

Ingredients

large eggs
Kosher salt
Freshly ground black pepper
- 1 tsp.
finely chopped fresh dill
- 1 tsp.
finely chopped fresh flat-leaf parsley
- 1 tsp.
finely sliced fresh chives
- 1 Tbsp.
unsalted butter
- 2 oz.
thinly sliced brie (about 3 slices)
Directions
- Step 1In a medium bowl, beat eggs until blended; season with a large pinch of salt and a few grinds of pepper. Stir in dill, parsley, and chives.
- Step 2In a medium nonstick skillet over medium heat, melt butter. Pour in egg mixture and tilt pan so eggs cover entire pan. As eggs start to set, using a rubber spatula, drag cooked edges into center of pan. Once eggs are almost set, spread into an even layer, covering bottom of pan. This whole step takes about 1 minute.
- Step 3Top half of eggs with brie and cover skillet. Remove from heat and let sit 30 seconds. Uncover and fold other side up and over brie. Slide omelet onto a plate.
