The marshmallow buttercream in this cake — our favorite that we originally made for this Giant Twinkie Cake — is perfect. Start by adding 1/4 cup heavy cream and add by the tablespoon until the texture is nice and creamy.
Ingredients
For the cake
Cooking spray

box vanilla cake mix, plus ingredients called for on box
- 1 1/2 cups
crushed graham crackers (about 10 crackers)
For the filling
- 1
(14-oz.) can sweetened condensed milk
- 1/2 cup
semisweet chocolate chips, melted
For the marshmallow frosting
- 1/2 cup
(1 stick) butter, softened
- 1
(7.5-oz.) jar marshmallow crème
- 3 cups
powdered sugar
- 1 tsp.
pure vanilla extract
- 1/2 cup
heavy cream
For topping
- 2
Hershey's chocolate bars, broken into squares
- 1 1/2 cups
mini marshmallows
- 2
graham crackers, crushed
Melted chocolate, for drizzling
Directions
- Step 1Preheat oven to 350º and spray a 9"-x-13” pan with cooking spray. Prepare cake batter according to package instructions. Fold in crushed graham crackers.
- Step 2Bake until a toothpick inserted in center of cake comes out clean, about 30 minutes.
- Step 3 Let cool slightly, then poke holes all over bottom of cake with a wooden spoon. In a small bowl, mix together sweetened condensed milk and melted chocolate. Pour mixture into poke holes.
- Step 4 Make frosting: In a large bowl using a hand mixer, beat butter until light and fluffy, then add marshmallow crème, powdered sugar, and vanilla and beat until smooth. Gradually add heavy cream if mixture is too stiff.
- Step 5 Frost cake and top with marshmallows, chocolate bars, and graham crackers.
