Halloween Monster Cookies

What would you do if dozens of beady little eyeballs were staring you down, all at once? Before you answer, let me say: It depends on the situation. In the dark, anyone sane would freak out. But, if said eyeballs were candy eyes in a big stack of little monster Halloween cookies, you would freak out in a very different way — because the sugar neon cookies are so dang cute!
You need to make this adorable Halloween dessert ASAP for all of the little monsters in your life. They taste like vanilla cake, but have the texture of a chewy crinkle cookie. Sounds amazing, right? Here's how to make them:
Doctor a vanilla cake mix with melted butter, powdered sugar, eggs, and some vanilla. Heads up: It'll be much thicker than your normal cake batter. Once the dough is made, divide the mixture into different bowls, one for every color you want. Dye the dough with food coloring (pink, green and blue seemed very Monsters Inc. to us), then roll the dough in sugar and bake until crackly.
While the cookies are still warm, add the candy eyeballs! Designing the monsters is by far the best part, and kids will definitely want to help. Just be sure to (carefully) transfer the cookies from the hot baking sheet to a nice cool plate before letting them decorate.

Ingredients

box vanilla cake mix
- 6 Tbsp.
melted butter
- 2
large eggs
- 1/3 cup
powdered sugar
- 1 tsp.
pure vanilla extract
Food dye in 3 colors (like green, blue, and pink)
- 1/2 cup
granulated sugar
Candy eyeballs
Directions
- Step 1Preheat oven to 350°. Line 2 large baking sheets with parchment paper. In a large bowl, combine cake mix, melted butter, eggs, powdered sugar and vanilla, and stir until combined.
- Step 2Divide dough between 3 bowls and dye each bowl a different color. (We used green, blue and pink.) Roll dough into tablespoon-sized balls, then roll balls in the sugar.
- Step 3Place cookie balls about 2” apart on the baking sheets. Bake until tops have cracked and look set, 10 to 12 minutes.
- Step 4Immediately, while the cookies are still warm, stick candy eyeballs all over the cookies. Let cool completely before serving.
