Summer is here, and you know what that means: You get to grill every night! Elevate the ritual with these peppery Grilled Skirt Steak Tacos, complete with guacamole and Good & Gather Medium Serrano Pepper Salsa. Featuring tender, perfectly marinated skirt steak, fresh herbs, crumbly cotija cheese, and warmed corn tortillas, it is the perfect summer meal.

Ingredients
- 1 lb.
skirt steak
For the Marinade
- 3 Tbsp.
fresh orange juice
- 2 Tbsp.
fresh lime juice
- 2 Tbsp.
soy sauce
- 1/3 cup
cilantro, finely chopped
- 1 tsp.
cumin
- 1/4 cup
olive oil
For the Guacamole
- 2
avocados, mashed
- 3 1/2 Tbsp.
lime juice
- 1
garlic clove, minced
- 1
small red onion, finely chopped
- 2 Tbsp.
cilantro finely chopped
- 12
corn tortillas, warmed
- 1/3 cup
cotija cheese
Directions
- Step 1Place the skirt steak in a zip-top bag or a deep baking dish. Whisk marinade ingredients together and pour over skirt steak. Set aside to marinate for at least 1 hour.
- Step 2Heat a grill pan or cast-iron skillet over high heat and grill steak 3 minutes a side. Remove from the heat.
- Step 3Rest steak for 15 minutes.
- Step 4While the steak is resting, stir together all the guacamole ingredients and set aside.
- Step 5Slice steak into thin strips.
- Step 6Serve sliced steak on warm tortillas topped with guacamole, Good and Gather Medium Serrano Pepper Salsa, and crumbled cotija cheese.
