This is really a peach cobbler in cake form. The cake is so soft and buttery, with little pockets of peach throughout, keeping the cake extremely moist. The frosting is a brown sugar boiled icing, much like you would find on a Texas sheet cake. Pour it on while the cake is still warm and let it soak in a little as it cools and slightly hardens on top. Some of the frosting will likely pool around the edges and sides, making the corner piece a coveted one for once. It’s undeniably a sweet cake that highlights one of summer’s best fruits and is so easy to make.

Ingredients

Cooking spray
- 3 cups
all-purpose flour
- 1 1/2 tsp.
baking powder
- 1 tsp.
baking soda
- 1 tsp.
ground cinnamon
- 1 tsp.
kosher salt

(2 sticks) butter, softened
- 1 cup
packed light brown sugar
- 3
large eggs
- 1 tsp.
vanilla extract
- 1 cup
buttermilk
- 3
medium peaches, peeled, pitted, and chopped
Icing
- 3/4 cup
packed light brown sugar
- 1/2 cup
(1 stick) butter
- 1/4 cup
whole milk
- 1/4 tsp.
kosher salt
- 1 cup
powdered sugar
- 1 tsp.
vanilla extract
Directions
Cake
- Step 1Preheat oven to 350° and grease a 13"-by-9" baking dish with cooking spray. In a large bowl, whisk flour, baking powder, baking soda, cinnamon, and salt.
- Step 2Using a hand mixer on medium-high speed (or in bowl of a stand mixer fitted with paddle attachment), in another large bowl, beat butter and brown sugar until light and fluffy. Add eggs, one at a time, beating well after each addition, then beat in vanilla. Add dry ingredients and mix until just a few dry streaks remain. Add buttermilk and mix until just combined. Fold in peaches. Pour into prepared pan and spread in an even layer.
- Step 3Bake until a tester inserted into center comes out clean, 30 to 35 minutes.
Icing
- Step 1In a medium pot over medium heat, bring brown sugar, butter, milk, and salt to a boil; cook 1 minute. Remove from heat and whisk in powdered sugar until smooth, then whisk in vanilla.
- Step 2Immediately pour icing over cake while still warm. Let cool completely.
