Besides being unbelievably delicious, pineapple casserole is ridiculously easy to throw together in just a couple of minutes, with ingredients you might already have in the pantry. What is pineapple casserole?
Trust us—while this combination might not seem like it works, it really, really does. Sweet pineapple is baked into a soft, gooey base that's balanced by the sharp cheddar and salty, crunchy crackers on top, resulting in a sweet-and-savory dream that's also a textural paradise.
While it may be tempting to mix up the ingredients, you're going to want to stick to the traditional ratios of canned pineapple to cheddar to crackers. Save the fancy shenanigans for pineapple desserts like our pineapple coconut cake or pineapple upside-down cake instead.
Can I use fresh pineapple?
Honestly, we don’t recommend it. Though you may be tempted to swap in fresh pineapple, stick with the canned version. It’s softer and sweeter, and contains the essential juice that brings this whole recipe together.

Ingredients
Cooking spray
- 6 Tbsp.
all-purpose flour
- 1/4 cup
granulated sugar
- 2
(20-oz.) cans pineapple chunks, plus 1/2 c. juice
- 1 cup
shredded cheddar
- 32
Ritz crackers (1 sleeve), crushed (about 1 1/3 c.)
- 4 Tbsp.
(1/2 stick) butter, melted
Directions
- Step 1Preheat oven to 350°. Coat an 8"-by-8" baking pan with cooking spray.
- Step 2In a large bowl, whisk flour, sugar, and 1/2 c. pineapple juice until combined. Add drained pineapple chunks and toss to coat. Transfer pineapple mixture to prepared pan.
- Step 3Sprinkle cheese evenly over pineapple mixture, then top with crackers. Drizzle butter over.
- Step 4Bake until filling is bubbling and crumbs are golden brown, 30 to 35 minutes. Serve immediately.
