Fans of the whiskey sour to the front, please! The Gold Rush cocktail is the whiskey drink you’re already in love with. Very similar to a whiskey sour, this shaken bourbon cocktail calls for honey syrup instead of simple syrup. You also won’t find egg whites in this recipe. This drink was born at the bar of Milk & Honey, a former swanky, members-only staple of the NYC bar scene. They were known for creating memorable cocktails, and the Gold Rush is no exception.
How do I make honey syrup?
Take the easy way out and make it in the microwave. As long as the water is warm enough to loosen the honey, you should be able to blend it very easily. Microwave prep also means fewer dishes. We used a ratio of 2:1 water to honey, but feel free to tweak that, adding more or less honey to suit your taste.
How can I make this my own?
Half of the fun of making a cocktail is putting your spin on an old favorite. Try this with hot honey instead if you’re a spicy cocktail person! If you love earthy and herby drinks, use a sprig of thyme or rosemary as a garnish.

Ingredients
- 4 oz.
water
- 2 oz.
honey
- 3 oz.
bourbon whiskey
- 2 oz.
fresh lemon juice
Ice cubes
Lemon peel, for garnish
Directions
- Step 1In a heatproof measuring cup, combine water and honey. Microwave on High, stirring occasionally, until honey is dissolved, about 30 seconds.
- Step 2In a cocktail shaker, combine honey syrup, whiskey, and lemon juice. Fill shaker with ice, cover, and vigorously shake until outside of shaker is frosty, about 30 seconds. Strain into 2 ice-filled rocks glasses. Garnish with lemon peel.
