Although Italian dressing isn’t actually Italian, and though it’s more associated with a bottled product than an actual recipe, we still have a soft spot for this sweet and tangy vinaigrette. Our version is made with simple ingredients you likely already have in your pantry, and it’s the perfect adornment for light crunchy salads to accompany your chicken parm or pan pizza.
Since some of these ingredients vary in flavor from brand to brand, it’s important to taste and adjust according to your palate. Too tangy? Add a little olive oil to combat the sharpness of the vinegar. Too sweet? A little salt or some more vinegar will put the honey in check. Adjust as you like. And if you’re a mayo-hater, it can be replaced with 2 additional tablespoons of olive oil.
Note: This recipe yields about ¾ cup dressing, which is enough for a large dinner salad. Kept in the refrigerator, it will last at least a week.
