What can't the air fryer do? For starters, it can turn out fluffy oat pancakes and make a crispy chicken sandwich with a fraction of the oil you'd normally use. It can bake up perfect peanut butter-and-chocolate cookies and perhaps best of all, it makes crunchiest of crunchy granola. That's because an air fryer works by circulating extra high-powered hot air around whatever it cooks, which is exactly what's required to create granola with a crispy, not soggy, texture. That's the case in this batch of Cinnamon Crunch Granola, which is chock-full of pecans, pumpkin seeds, and coconut. Of course, if you'd rather other mix-ins, you can play around with whatever nuts and seeds you have on hand as long as the dry ingredients add up to 3 1/4 cups total.

Ingredients
- 1/3 cup
packed light brown sugar
- 1/4 cup
extra-virgin olive oil
- 1 Tbsp.
ground cinnamon
- 2 tsp.
pure vanilla extract
- 1/4 tsp.
kosher salt
- 1 1/2 cups
old-fashioned rolled oats
- 1/2 cup
raw pecans, roughly chopped
- 1/2 cup
raw pumpkin seeds (pepitas)
- 1/2 cup
unsweetened coconut flakes
- 1/4 cup
raw sunflower seeds
Fresh berries and yogurt, for serving (optional)
Directions
- Step 1 In a large bowl, combine brown sugar, oil, cinnamon, vanilla, and salt. Add oats, pecans, pumpkin seeds, coconut, and sunflower seeds and toss to combine.
- Step 2Line an air-fryer basket with foil, coming 1" up the sides to create a foil basket. Add one-third to one-half of oat mixture (depending on size of air fryer). Cook at 350°, stirring halfway through, until golden and crispy, 6 to 9 minutes.
- Step 3Transfer to a large heatproof bowl and let cool. Repeat with remaining oat mixture.
- Step 4Serve with berries and yogurt, if desired.
- Step 5Make Ahead: Granola can be made 1 month ahead. Store in an airtight container at room temperature.
