It's no secret that many great weekend mornings start with pancakes. Whether it's the classic fluffy variety, buttermilk ones studded with blueberries, or flapjacks filled like cannoli, this breakfast treat is a winner with almost everyone. Well, that is, except for the cook, who is all-too-often stuck by the griddle turning out batch after batch. No longer, thanks to the air fryer, which makes giant single-serving pancakes a breeze. These are made with oat flour, which means they're suitable for gluten-free pancake lovers, as well as anyone who loves the slightly nutty taste of oats. (If you are cooking for gluten-free eaters, make sure your oats are certified GF.) Bonus: oats are high in fiber, which helps the body process sugar—as in the glug of maple syrup on top of your stack.
Oat flour is pretty easy to find in most supermarkets, but in case you can’t find it, you can make your own from rolled oats: Place 3/4 cup old-fashioned oats in a food processor and process until the oats are finely ground, about 30 seconds. This should make about 3/4 cup oat flour. Freeze any leftovers and pop them in the toaster to reheat.

Ingredients

- 1/2 cup
whole milk
- 1 Tbsp.
butter, melted
- 1 tsp.
maple syrup, plus more for serving
- 1/2 tsp.
pure vanilla extract
Olive oil cooking spray
Greek yogurt and fresh fruit, for serving
Directions
- Step 1In a medium bowl, whisk flour, baking powder, and salt. In another medium bowl, whisk egg, milk, butter, syrup, and vanilla. Fold dry ingredients into egg mixture until just combined.
- Step 2In another medium bowl, whisk milk, egg, butter, maple syrup, and vanilla. Fold dry ingredients into wet ingredients until just combined.
- Step 3Grease a 6" pie dish with cooking spray, then add one-quarter (about 1/4 cup) of batter. Place dish in an air-fryer basket. Cook at 400° until pancake is puffed and lightly golden, about 3 minutes. Repeat with remaining batter.
- Step 4Top pancakes with yogurt, more syrup, and sliced fruit.
