If you're looking for the crispiest sweet potato hash without the requisite oil to get there in a stovetop pan, then look no further: the air fryer is here to save the day. (Or at least breakfast.) Alongside the cubes of tender sweet potato, you'll mix in red bell pepper to draw savory notes out from each bite, while a shower of fresh dill and sliced scallions add fresh flavor. This is a pretty powerful breakfast as is, but for extra oomph, add a dollop of Greek yogurt or a poached egg on top. Or, pair sweet potato has with eggs benedict and mimosas for a weekend-worthy brunch. Of course, you could do double duty with your air fryer serve up a few air fryer omelettes once the hash is ready.
Smoked paprika and dill make these supercharged potatoes a savory breakfast-lover’s dream. Change up the spices depending on what’s in the pantry (chili powder would be nice!). If you go the chili powder direction, try the hash topped with slices of avocado and cilantro in place of dill.

extra-virgin olive oil
- 1 1/2 tsp.
smoked paprika

Directions
- Step 1In a medium bowl, toss sweet potato, onion, bell pepper, oil, paprika, 1 teaspoon salt, and 1/4 teaspoon pepper to combine.
- Step 2Working in batches, in an air-fryer basket, arrange potato mixture in a single layer (do not overcrowd). Cook at 400°, tossing halfway through, until potatoes are browned in spots and cooked through, about 14 minutes.
- Step 3Transfer potato mixture to a platter. Top with scallions and dill.
