How To Make Brie, Asparagus & Prosciutto Bundles

Ingredients

Honey: A mixture of honey, butter, and salt creates the final finishing touch to these bundles. If you want to up the flavor, you can add some red pepper flakes to make this more of a hot honey butter situation.
Asparagus: You’re going to want to prep your pencil asparagus before assembling the bundles. The bottom of asparagus spears are pretty tough and nearly impossible to bite through even when cooked, so trim the bottom inch or so off of each spear.
Puff Pastry: Flaky and buttery puff pastry makes these bundles easier than ever to put together. Making it from scratch can be a long and tedious process—that’s why store-bought puff pastry is a savior here.
Prosciutto: Prosciutto makes these bundles extra rich and decadent, and adds that perfect savory note. If you want to make this appetizer vegetarian, make Alfredo asparagus bundles or brie and green bean bundles instead.
Brie: Oh brie, how I love you. Cut a brie wheel into 12 pieces to add a special surprise into each bundle. It adds the perfect melty, cheesy bite to this app.

Step-By-Step Instructions

First, it’s time to assemble the honey butter we’ll use later in this recipe. All you need to do is melt unsalted butter, then add in honey and salt and mix to combine.

Then, after trimming and prepping your asparagus, toss your spears in some olive oil and use your hands to make sure they are all evenly coated.

Next, get out that magic ingredient: puff pastry. Lightly flour your work surface, then roll out each sheet of puff pastry (one at a time!) into a rectangle. Cut each of them into 6 squares, so you have 12 total.

Now, it’s time to get to assembling. Rotate your square to make it a diamond shape, and brush with the prepared butter mixture we made earlier. First, add your prosciutto. If it doesn’t fit well, fold it as needed so that it fits well inside the square. Top with a few pieces of asparagus (2-3 depending on the size), then follow with a slice of brie. Repeat with each square until every bundle is filled and ready to go.

Next, fold the left side of your puff pastry over the filling, and brush with your prepared egg wash. Then, fold the right side over, and brush the top and the sides with more egg wash. Season with some pepper to taste, and arrange on your baking sheet. If you have any leftover butter mixture, don’t toss it—we’ll use it later. Bake the bundles until they are golden and the brie is melty. Brush with any reserved butter mixture (lucky you if you have some), and serve.

Make Ahead

You can assemble these up to one day ahead if you want to get started on your party planning. After assembling, keep them covered in plastic wrap before baking so that the dough and prosciutto don't dry out in the fridge.
