Few things are better on a weekend morning than a comforting, custardy homemade breakfast, which is why this Overnight Almond Butter-Banana French Toast should be your new go-to. It’s ultra gooey inside, thanks to overnight soaking, and full of flavor, courtesy of JUSTIN’S® Vanilla Almond Butter, sliced banana, and a crunchy crumble topping. Make this French toast for a solo, treat-yourself A.M. meal or serve it up at brunch with friends. You’re deffffffinitely gonna be coming back for more of this easy, totally addictive dish.

Ingredients
- 3/4 cup
JUSTIN’S® Vanilla Almond Butter (divided)
- 2 Tbsp.
butter
- 1/2 cup
quick oats
- 1/4 cup
brown sugar
- 1/2 tsp.
cinnamon
Dash kosher salt
- 2 Tbsp.
honey
- 1 1/4 cups
milk of your choice
- 4
large eggs
- 1
loaf brioche bread (about 1 lb.) cut into cubes
- 2
bananas, cut into 1/2" pieces
Directions
- Step 1Put ¼ cup JUSTIN’S® Vanilla Almond Butter and butter in a medium microwave-safe bowl. Microwave on high for 30 seconds.
- Step 2Stir together the oats, brown sugar, cinnamon, melted Justin’s Vanilla Almond Butter with butter, and salt to make a crumble and set aside. Place the remainder of the almond butter into a large bowl with the honey, slowly whisk in the milk a little at a time to thin out the almond butter, then whisk in the eggs.
- Step 3Place the bread cubes into a greased casserole dish, then add the bananas, and pour the egg mixture over the top. Finish by spreading the crumble over the top. Cover and refrigerate overnight.
- Step 4Preheat oven to 350°, then bake for 40 minutes.
