Blue cheese dressing can go on top of a simple spinach salad, its signature soulmate buffalo wings, or even as a french fry dip. For a condiment this versatile, it needs to be both classically all-purpose in taste and spiked with a little je ne sais quoi.
For this version, we’re going beyond the age-old triple threat of mayo, sour cream, and buttermilk and diving deep into the nuanced tangs of three more ingredients: lemon, Dijon, and MSG. Worry not—if you have a fear of trying new things, you can omit these additions for a more bare-bones creamy goodness. But until you taste it, you won’t know what you’re missing. Lemon zest provides brightness while lemon juice gives balance to the richness with a taming acidity. Dijon mustard adds a subtle layer of richness—like one would find in more aged cheeses—without adding actual fat. MSG adds umami-rich tangy saltiness that is reminiscent of ranch dressing.
Curiously, I’ve discovered that the cheaper and less fancy blue cheese, the better the results. If you give this blue cheese dressing a try, drop us a comment down below and let us know your thoughts!
