Even in the dead of winter we still like to pretend we are on a beach sipping on Piña Colada. Since we can't actually do that most of time, this winterized version does the trick! A cocktail that's festive and tropical all at the same time!

Ingredients
Shredded coconut, for rimming
Lime wedge, for rimming
- 1/4 cup
coconut milk
- 1/4 cup
pineapple juice
- 1/2 cup
frozen pineapple
- 4 oz.
prosecco
Directions
- Step 1Place coconut on a plate. Rim two champagne flute with a lime wedge, then dip into coconut.
- Step 2In a blender, add coconut milk, pineapple juice, frozen pineapple, and prosecco. Blend until smooth.
- Step 3Pour mixture into rimmed glasses.
