Ham and Cheese Omelet Sticks

This recipe makes breakfast easy for kiddos and grownups too. Crumbled butter crackers form a crunchy crust for a tasty ham and cheese omelet, no silverware required. Eggland's Best eggs are the star ingredient in these amazing grab-and-go sticks that'll keep the whole family happy until lunch.

Ingredients
Cooking spray
- 56
buttery crackers (2 c. fine cracker crumbs)
- 6 Tbsp.
unsalted butter
- 6
large Eggland’s Best eggs
- 3/4 cup
whole milk
- 2 Tbsp.
unbleached all-purpose flour
Kosher salt
Freshly ground black pepper
- 1 1/2 cups
shredded cheddar cheese
- 1 cup
diced deli black forest ham (about 6 oz.)
- 1/4 cup
fresh parsley leaves, chopped
Directions
- Step 1Preheat the oven to 375°. Grease an 8-by-8 baking dish with cooking spray and line with parchment. Grease parchment.
- Step 2In a food processor pulse the crackers until fine crumbs. Add the butter and pulse until combined. Pour the cracker mixture into the prepared baking dish and press into a firm even crust.
- Step 3Bake the crust until lightly golden, about 14 minutes. Remove to a wire rack.
- Step 4In a large bowl, whisk the eggs, milk, and flour. Season with salt and pepper. Stir 1 cup of the cheese, ham, and parsley into the egg mixture. Pour the egg mixture over the hot crust.
- Step 5Bake until the egg is set, about 30 minutes. Remove from the oven and let cool 15 minutes, then slice into sticks and serve.
