Copycat Cracker Barrel Hashbrown Casserole

Hash Browns are a true blue American breakfast staple. But when your brunch visitors come over, do you really see yourself frying up those spuds for everyone at the table? Send them to a diner! Enter the Cracker Barrel Hashbrown Casserole.
This bacon-y, cheesy bake is a cornerstone of the Cracker Barrel breakfast menu, and it's foolproof (and super easy) if you’re making it at home! Although most classic hash brown casseroles call for cream of chicken soup, Team Delish found that the added creaminess imparted a bit of a gluey mouthfeel, while detracting from that shattering crispiness we crave at breakfast. This version will retain a fully cheesy interior – without being gluey and bland.
Want to use frozen hash browns? That’s great! Simply thaw them and use the same technique to squeeze out any excess moisture.
We took after the “loaded” version of Crack Barrel casserole by topping it with some crispy bacon, but feel free to top with whatever you’d like, from jalapeños to fried shallots! However you have it, let us know how it came out in the comments below.

Ingredients

to 5 russet potatoes (about 2 ½ lbs), peeled
- 1/2
large onion, peeled
- 1 3/4 cups
Colby cheese, shredded and divded
- 3
large eggs, beaten
- 1/4 cup
sour cream
- 2 tsp.
garlic powder
- 2 tsp.
kosher salt
- 1/2 tsp.
freshly ground black pepper
Cooking spray
- 2
strips bacon, cooked and crumbled
Directions
- Step 1Adjust an oven rack to center position, and preheat to 350ºF. Using a box grater or the grater attachment on your food processor, grate the potatoes and onion.
- Step 2Working in batches, place handfuls of shredded onions and potatoes in a clean kitchen towel. Squeeze and discard all the excess liquid. Transfer the potatoes and onion to a bowl.
- Step 3Add 1 cup cheese, eggs, sour cream, salt, garlic powder, and black pepper to the potato mixture. Toss until thoroughly combined.
- Step 4Spray a medium baking dish or large oven-proof skillet with cooking spray, and fill with the potato-onion mixture
- Step 5Top with the remaining cheese and crumbled bacon, then transfer to the oven. Bake for 1 hour, or until the edges of the casserole are thoroughly browned, and the cheese on top is melted and bubbly.
