More than just a side, cauliflower can take the center stage in many of our favorite recipes. From our loaded grilled cauliflower to our brown sugar BBQ whole roasted cauliflower, we’ve transformed the humble veggie into countless dinner superstars. That being said, cauliflower is also the vegetable we turn to again and again when we need a simple roasted side. It can take to almost any seasoning, and works with almost any dish you serve it alongside. It’s oh so simple to make, but here’s everything to know when making this staple side dish:
How to season roasted cauliflower:
Our recipe adds just a touch of color and zesty flavor with Old Bay seasoning. It's kinda like putting Old Bay on popcorn—only healthier and way more delicious. That being said, feel free to get creative! Cauliflower is one of our favorites to roast because, flavor-wise, it is very much a blank canvas. You can keep it simple with just salt and pepper or go nuts with a custom spice blend like Cajun or adobo seasoning.
How to make roasted cauliflower:
A 425ºF oven is the ideal roasting temperature for most veg (see our Brussels sprouts and green beans recipes) to give them that high-heat caramelization (aka flavor), and this cauliflower is no exception. Simply preheat your oven, season your cauliflower, then bake in a single layer on a lined baking sheet until they have browned at the edges (around 25 to 30 minutes). Tip: We highly recommend cooking your cauliflower in a single layer, and tossing halfway through to ensure an even cook.
Serving ideas:
Just like many of our roasted veggie sides, you can really serve this cauliflower dish with practically anything (Pro Tip: customize your seasoning blend based on the meal you're serving it with!). Pair it with your favorite weeknight dinners, from pork chops to grilled chicken to BBQ tempeh. Want to bulk up your salad? Load this roasted cauliflower on top of your fave greens!

medium cauliflower (2 to 3 lbs), cut into florets
- 3 Tbsp.
extra-virgin olive oil
- 1 1/2 tsp.
Old Bay seasoning
- 1 tsp.
Kosher salt
- 1/2 tsp.
Freshly ground black pepper
Directions
- Step 1Preheat oven to 425ºF. In a large bowl, combine cauliflower, olive oil, Old Bay, salt and black pepper.
- Step 2Add cauliflower to a sheet tray and distribute into a single layer. Roast the cauliflower for 25 to 30 minutes, tossing halfway through, until the florets have browned on the edges. Transfer to a plate or bowl and serve.
