Ingredients

butter
- 1
large yellow onion, minced
- 3
carrots, peeled and sliced
- 1 cup
green lentils
- 1
bay leaf
- 1
cube vegetable bouillon
Freshly ground black pepper
- 6
sweet Italian fennel sausages
- 2 tsp.
kosher salt
Chopped fresh parsley, for garnish
Directions
- Step 1In a large pot over medium heat, melt butter. Add onion and carrot and cook until softened, 5 minutes.
- Step 2Add lentils, bay leaf, and vegetable bouillon, breaking it up with a wooden spoon. Season with pepper. Add 6 cups water and bring to a boil. Reduce heat to a simmer and cook, covered, until lentils are tender, about 20 minutes.
- Step 3Place whole sausage into the pot and stir. Cook, covered, until sausages are cooked through, 15 minutes.
- Step 4Remove sausages from pot and slice. Stir back into pot and season soup with salt. Increase heat to medium-high and cook, stirring frequently, until lentils have broken down and soup thickens.
- Step 5Garnish with parsley before serving.
